Gluten is a substance (protein) found in all forms of wheat, rye, barley, oats, spelt, triticale and kamut.
Coeliac Disease is an auto-immune disease that involves inflammation of the intestinal tract caused by a response to eating gluten. This is a serious condition whereby any amount of gluten in the diet is a risk to health.
You don’t have to suffer from Coeliac Disease to have a gluten intolerance. Having even low to moderate amounts of gluten in the diet can cause symptoms such as abdominal bloating or pain, diarrhoea but more commonly constipation, flatulence, heartburn and nausea. Sinusitis, asthma, skin disorders, mouth ulcers, fatigue, muscle and joint pains can also be symptoms of gluten sensitivity.
The following foods can be substituted for gluten-rich foods: buckwheat, rice, maize (corn), quinoa (pronounced keen wa), millet, amaranth and chickpea flour (besan).
